My Roasted Crunchy Chickpea Nibbles

These healthy nibbles are surprisingly delicious and nutritious and make a fantastic Christmas and NYE nibble to take with you wherever you go as a healthier alternative to chips, dips and crackers.

As a legume, chickpeas are considered both a vegetable and protein food, helping you hit two important food groups at once. These nutty beans are also rich in a number of important nutrients that keep you well, including protein, vitamins, minerals and fibre. It is believed that including chickpeas in your diet may play a role in reducing your risk of a number of chronic illnesses such as heart disease, diabetes and cancer.

You can pretty much pick a flavour depending on your mood from sweet to savoury. My favourites are these two - Mild Curry Chickpeas and Roasted Chilli Chickpeas. These crunchy bite sized snacks are like little explosions of flavour which can be eaten as a snack on their own or thrown in a salad.

Ingredients:

1 can of salt reduced chickpeas

Olive Oil - spray or drizzle

For Chilli Chickpeas: Combine 1 teaspoon of Praprika with 2 teaspoons of chilli flakes

For Curry Chickpeas: 2 teaspoons of mild curry powder

Directions:

Preheat oven to 180 degrees celcius and line 2 separate baking trays with baking paper.

Pat dry your rinsed chickpeas with a paper towel to absorb any excess moisture then toss the chickpeas into your seasoning and mix well so

all chickpeas are coated.

Spread chickpeas in an even, single layer on each seperate baking tray and spray or drizzle with olive oil.

Roast for 50 minutes or until they are crisp and crunchy to bite. If you prefer them to be softer, just bake for less time.
