My 10 min Prawn & Baby Spinach Arrabbiata Spaghetti


Originating from an authentic Italian recipe, my prawn baby spinach arrabbiata spaghetti is very easy to make in only 10 minutes and is a great source of protein, fibre and essential vitamins and minerals such as vitamin A, vitamin C, vitamin B6, calcium and iron which support immunity and body function. Low in calories but a hearty winter meal, this dish is delicious and will soon become a favourite to whip up by keeping a few ingredients in the fridge and pantry for the 5pm dinner panic!

Ingredients:

1 packet of San Remo Spelt Spaghetti - easier to digest without the bloating and higher in fibre

1 Jar of Chef's Choice Organic Arrabiata Pasta Sauce - a rich, zesty tomato-based sauce with a hint of Italian Chilli Pepper and no sugar or anything artificial

1 packet of Frozen Australian Tiger Prawns

1 punnet of Australian Cherry Tomatoes

1 bag of Baby Spinach

1/4 cup shaved parmesan cheese to serve

Directions:

1. Cook spelt spaghetti in boiling water for 10 mins according to packet instructions and drain well

2. In a fry pan cook cherry tomatoes until soft and set aside

3. Defrost prawns in hot water for a few minutes then cook in fry pan for approximately 3 minutes each side until firm

4. Add in the softened cherry tomatoes, baby spinach and arrabbiata sauce to the pan with the prawns and cook until the spinach is wilted and finally add in the cooked spaghetti if you have room in your fry pan otherwise serve pasta in a bowl and top with pan ingredients. Serve with parmesan cheese and extra chilli flakes if you like it hot! Easy and delicious!
