My Banana Apple Cinnamon Loaf

It's raining outside and you feel like something warm and comforting to eat, but you want it to be healthy then you can't go past my banana, apple and cinnamon loaf. A much healthier alternative to banana bread you can buy, it's high in fibre which helps you keep feeling full and satisfied until your next meal. Eat it an hour before working out to give you lots of good energy. It's easy to make even if you don't normally bake so give it a go. Yummy toasted or as a snack cold.

Ingredients:

3 eggs

1/4 cup of honey or maple syrup

2/3 cup wholemeal, buckwheat or gluten free plain flour

2 teaspoons baking powder

1 cup almond meal

2 bananas mashed

2 apples grated

1 cup sultanas

2 teaspoons ground cinnamon

Directions:

  1. Preheat the oven 150 degrees celsius (fan forced) or 170 degrees celsius without fan

  2. Whisk the eggs with the honey or maple syrup.

  3. Mix in the flour with the baking powder, almond meal and cinnamon

  4. Add mashed bananas, grated apple and sultanas and mix with the whisk or spoon

  5. Pour the mixture into a loaf tin that is lined with baking paper

  6. Bake in oven for 40 mins until golden and spongy yet firm to touch - it may need an extra 10 mins depending on your oven

  7. Slice the loaf and enjoy!
