These muffins are amazing, so easy to make and can be frozen for breakfast on the go whenever you need it. You can also have them with the kids for after school healthy snacking or for when you want something with your cup of tea.
My blueberry banana walnut muffins are sweetened only with maple syrup and have no refined sugars, animal fats or dairy so are vegan and vegetarian friendly. They are also made with wholemeal flour so are high in fibre and did I mention they are so delicious but so healthy!
Ingredients:
3 cups wholemeal self raising flour
2 cups frozen blueberries
1/2 cup maple syrup
3 tbs finely chopped walnuts or pecans
3 mashed ripe bananas
1 1/2 cups water
3 teaspoons ground cinnamon
Directions:
1. Preheat oven 180 degrees celcius
2. In a large bowl mash bananas
3. Add cinnamon, flour, water, maple syrup and chopped nuts and mix well. The mixture should not be too wet, if it is add a little more flour. If it's too dry, add a little more water
4. Fold in blueberries
5. Spoon into greased (use grape seed oil or coconut oil) 12 hole muffin tray and bake for about 25 mins
