My Banana Walnut Loaf


My banana walnut loaf is healthy and delicious and will satisfy after dinner and late afternoon cravings. Easy to make and a great high fibre after school snack that the kids can help you make!

Walnuts are a rich source of fibre, antioxidants, and unsaturated fatty acids, particularly alpha linolenic acid, an omega-3 fatty acid. These are the nutrients that give walnuts stress and depression fighting properties and they even contain melatonin to help you sleep!

Ingredients:

1 3/4 cups wholemeal flour

1 1/2 tsps baking powder

1/4 teaspoon bi carb soda

1/2 cup maple syrup

1 cup chopped walnuts

2 eggs

1 cup mashed banana

1/4 cup milk of choice (I used almond milk)

2 tsps ground cinnamon

Directions:

1. Pre-heat the oven 180 degrees celcius and line a loaf tin

2. in a bowl add the flour, baking powder, cinnamon, bi carb soda and chopped walnuts and mix

3. Add the eggs, maple syrup, banana and milk to the bowl of dry ingredients and mix

4. Pour into the lined loaf tine and bake for 45 minutes and leave in tin until cool for about 10 mins

Cut, serve with butter and enjoy!
