My Oven Baked Salmon with Veg

Some of my clients have been asking me for easy healthy dinner ideas that don't require being much of a cook so here's one that is quick, easy and delicious - oven baked salmon with lemon and parsley. Salmon is one of the most nutritious foods on the planet and has many health benefits largely based on it's omega-3 fatty acid content which is said to improve mood and decrease risk of cardiovascular diseases such as heart attacks and strokes. Widely available and very versatile you can cook it in tomatoes, use in curries or keep things simple like this...

All you need to do is buy salmon fillets at your local fish monger or grab a packet of John West salmon fillets at the supermarket and wrap it in a parcel in some baking paper and that's pretty much it. You can even microwave your veggies if you don't feel like steaming or baking.

Ingredients:

Salmon fillet

Lemon

Parsley

Steamed mixed vegetables such as asparagus, carrot and zucchini or broccoli

Directions:

1. Pre-heat oven to 200 degrees celcius

2. Chop parsley and slice lemon

3. Lay salmon fillet on sliced lemon on baking paper and scatter parsley on top of the fillet

4. Fold over baking paper including sides like you're wrapping a present and bake in the oven for 25 minutes or until cooked. Serve with steamed vegetables or salad.
