These dark chocolate chip cookies are so amazing and I often bake them for friends birthdays and wrap them in cellophane with ribbons as a home made gift. I use Lindt 85% dark chocolate as dark chocolate with a higher cocoa content is packed full of nutrients and antioxidants compared to processed milk chocolate. Often called bittersweet, it has minimal sugar and teamed with rolled oats and wholemeal flour, these cookies are packed with dietary fibre. I know you will love these as much as I do for a special treat only!
Ingredients:
2 cups wholemeal self raising flour
1/2 cup rolled oats
1/3 cup caster sugar or brown sugar
100g Lindt 85% dark chocolate chopped
1/2 cup rice bran oil, mild olive oil or melted butter if you prefer
1/2 cup maple syrup
1 egg
Directions:
1. Preheat oven 180 degrees celcius
2. Place flour, oats, sugar and chocolate in bowl and mix to combine
3. Make a well in the centre of the bowl and add oil or melted butter, maple syrup, egg, vanilla and mix to combine
4. Shape heaped mixture into cookies and flatten slightly on baking trays with non-stick paper
5. Bake for 15 mins or until golden and leave to cool on a rack as pictured
