My Christmas Cacao Coconut Balls Recipe

These are a quick healthy snack that you can make in advance and freeze to take to Christmas parties and when you are told 'not to bring anything' instead of a box of chocolates. Start this recipe a day in advance so they have time to set. They even make great homemade Christmas gifts in gift bags. They are a great little sweet treat after a meal with a cuppa and because you made them yourself, they have no artificial nasties or processed sugars and are vegan and gluten free. Easy to make, delicious and nutritious!

Ingredients:

12 medjool dates

1 cup almond meal

1/2 cup shredded coconut plus 1/3 cup extra for rolling

1/3 cup coconut oil, grapeseed oil or rice bran oil

1/3 cacao (or cocoa powder if you don't have cacao)

1 tablespoon chia seeds

Directions:

1. Place dates in a medium bowl and cover with water for 1 hour. Drain and discard seeds

2. Process dates, almond meal, shredded coconut, coconut oil, cacao powder and chia seeds until mixture is smooth. Transfer to a bowl and let stand for 20 minutes until chia seeds soften

3. Place remaining coconut on tray or dish and roll level tablespoons of mixture into balls and coat in coconut.

Place in the freezer or refrigerator until serving and enjoy!
