My Chicken Mango Macadamia Salad

This salad may just be my new favourite and my friends and family love it! Nothing says Summer like chicken with mango and macadamia nuts. A great combination of healthy fats, protein and carbs that will keep you full and satisfied for lunch or dinner. The big difference with this salad is because you steam the chicken breast rather than poaching it in stock it is even healthier as without the stock there is no added sodium content. You can brush the chicken breast with olive oil and grill or you can oven bake the chicken, but on a hot summer day I prefer not to put the oven on or go out to a hot BBQ and just use the stovetop in air-conditioning!

Ingredients:

Baby spinach

Carrot julienned or grated

Cucumber diced

Chicken breast

Mango sliced

Macadamia nuts

Olive oil

Balsamic vinegar (optional)

Directions:

1. Place chicken breast in a steamer basket on the stove on high and steam for 15 minutes and let rest while slightly pink until fully cooked so you don't dry the chicken out by overcooking

2. Toast the macadamia nuts in a fry pan until lightly golden brown

3. Assemble baby spinach with diced cucumber, julienned carrot and sliced mango. Top with chicken breast sliced and toasted macadamia nuts.

4. Drizzle with extra virgin olive oil and balsamic vinegar (optional)
