My Healthier Rocky Road

Rocky Road is one of my favourite treats but it is loaded with sugar, fats and chemicals and highly processed, so I created a healthier version that I have when friends come over or for an occasional treat. This recipe contains dark chocolate which is high in antioxidants and brown rice which gives it fibre and crunch with the good fats from the pistachios. Did I mention it's absolutely delicious but one serve is enough, so keep it in check for a treat or make half a batch if you don't trust yourself. It makes a great after school snack or after dinner snack too! Easy to make so give it a try.

Ingredients:

1/4 cup shelled unsalted pistachios

1/2 cup puffed brown rice

150g 85% Lindt dark chocolate

1/2 cup shredded coconut

1/4 cup craisins (as they have far less sugar than cranberries but you can use fresh cherries if you prefer)

Directions:

1. Line a brownie tin or small tin around 20cm with baking paper. Melt the chocolate in a heatproof bowl over a saucepan of simmering water

2. Combine the puffed rice, pistachios, coconut and craisins or cherries with the melted chocolate and stir well with a metal spoon so the chocolate doesn't seize

3. Transfer to the prepared tin and place in the fridge for 1 hour or until set. Leftovers can be frozen or stored in a container for 3 days.
