This version of chocolate mousse is made dark chocolate which is full of anti oxidants and tofu, a good source of protein and contains all eight essential amino acids. It is also an excellent source of iron and calcium. This dessert is vegan, gluten-free, egg-free and dairy-free. Perfect as a light after dinner treat or as a healthy snack as it's lower in fat and sugar than the original.
Ingredients:
100g Dark chocolate (85%)
300g silken tofu at room temperature* Both the tofu and the melted chocolate mousse need to be at room temperature
1 teaspoon vanilla essence
2 tablespoons cocoa
2 tablespoons maple syrup
Directions:
Place the chocolate in a heatproof bowl over a saucepan of simmering water and stir occasionally until the chocolate has melted. Set aside to cool to room temperature.
Place the tofu, cocoa, maple syrup and vanilla in a small food processor and process until smooth. Add the cooled chocolate and process again until smooth.
Give everything a good mix. Transfer into serving glasses or ramekins.
Chill in the fridge for a few hours or until it's set. Serve with fresh berries
