Chicken Schnitzel doesn't come to mind when you think of healthy dinners as they are normally highly breaded and deep fried but the way I make it is healthier and it really helps in keeping the chicken moist when you cook it. The answer - greek yoghurt! Yes yoghurt and chicken sounds foul (pun intended) but it really works well. I use Chobani fat free plain yoghurt and multigrain bread crumbs which you can buy easily but if you are gluten free you can process gluten free bread or spelt breads and make your own crumbs. I promise you it's delicious and a really tasty dinner that's easy to cook. Did I mention it's cheap as well - 1 large chicken breast I slice in 3 to get 3 schnitzels!!
Ingredients:
1 Chicken breast - sliced lengthways into 3 thin breasts
2 tablespoons Chobani plain fat free yoghurt
1/2 cup Multigrain Krummies
2 tablespoons olive oil or rice bran oil
Directions:
1. Place sliced chicken breasts in greek yoghurt and coat evenly
2. On a plate of crumbs (Krummies) pat the chicken breast onto the crumbs and make sure the chicken is coated evenly on both sides and refrigerate for 30 mins (if you have time) otherwise you can cook immediately - the refrigeration helps with making the crumbs stick to the chicken
3. Heat a fry pan to high and once hot lower to medium heat. Test the oil is hot in the pan by sprinkling crumbs into the oil. If the crumb starts sizzling, you're good to place the chicken breasts in the pan and cook for approximately 2-3 minutes each side or until there s a golden brown crust. This way the chicken is never dry but be sure it's never pink as it's under-cooked.
4. Plate with steamed greens and enjoy!
