My Banana Oat Maple Cookies


When you're feeling like something sweet like a biscuit or cookie, make up a batch of these banana oat maple cookies instead and keep them in the fridge. They take 10 minutes to make and around 10-15 minutes to cook so they are really easy to make and super healthy too! These healthy snacks are gluten free and dairy free with no refined sugars so you can snack on these daily and the whole family will love them! You also have lots of substitutes in case you don't have all the ingredients!

Ingredients:

1 1/2 cups of rolled oats

1/2 cup shredded or dessicated coconut

2 large bananas mashed

1/2 cup coconut oil melted or grapeseed oil

1/2 cup maple syrup or rice malt syrup or raw honey

1/2 teaspoon vanilla paste or vanilla essence

Directions:

1. Preheat oven to 160 degrees celcius

2. Line a large tray with baking paper

3. Combine the oats, coconut, mashed bananas in a bowl and mix well

4. Add the melted coconut oil or grapeseed oil , maple syrup or raw honey and vanilla and mix

5. Use a tablespoon of mixture and shape into a ball and lightly flatten onto the baking paper

6. bake for 10-15 minutes until golden brown. Allow to cool for crunch
