My Healthy Prawn & Baby Spinach Risotto

Risotto can take forever to make but with my cheats version you can have a delicious healthy risotto in just 10 minutes flat!

My version is made with brown rice which is a highly nutritious whole grain that is relatively low in calories (216 calories per cup), high in fibre, gluten-free and can be incorporated into a variety of dishes. Brown rice is also a good source of magnesium, phosphorus, selenium, thiamin, niacin and vitamin B6, and an excellent source of manganese, with 88 percent of your daily manganese in just one cup cooked so there's no excuse not to give this recipe a try - so easy even if you're not much of a cook, you will absolutely get it right.

Ingredients: (serves 4)

2 cups baby spinach

2 cups microwave brown rice

1 can whole peeled tomatoes

1 tomato based pasta sauce (I used arrabiata chefs organic sauce)

12-15 frozen tiger prawns (I used Australian tiger prawns)

Directions:

1. Pan fry defrosted prawns in a little olive oil for 3 minutes each side on medium heat or until cooked firm

2. Add pasta sauce and whole peeled tomatoes to pan

3. Add baby spinach and cook until wilted

4. Microwave brown rice as per packet instructions

Top with parmesan cheese and dried chilli flakes to serve
